Wild garlic (Allium ursinum), also known as ramsons, buckrams, wood garlic and bear?s garlic, is a bulbous, herbaceous perennial with a slightly milder flavour than regularly cultivated garlic. Being native to the temperate regions of Europe, where it grows in deciduous woodlands, it is remarkably easy to cultivate, favouring the shade, moist and damp soils and slightly acidic conditions. The entire plant is edible, including its leaves, bulbs and flowers, but it?s in the spring when its flower buds become visible that it?s at its most delicious. Use it in salads, as a herb, or even boiled as a vegetable. Its flowers also make a lovely plate decoration.

Our advice: You can even preserve the flower buds of wild garlic in vinegar to eat like pickles. To do this simply fill glass jars with the washed and dried buds. Add some herbs and aromatic seeds such as coriander seeds, then introduce boiled white vinegar before closing. (Keep for at least 6 months before sampling.)
